摘 要:我国食用菌产量大,但农药残留问题比较严重,对食品安全和居民健康造成严重威胁。尽管各类检测技术具有良好的检测性能,但是基质效应严重影响了检测的准确性。目前,国内外基质效应相关综述多从影响因素及解决策略两个角度分开论述,缺乏从产生基质效应的内源性及外源性因素两方面阐述其影响机制及相应补偿策略。因此,本文从基质效应的内源性和外源性因素两个角度分析其影响机制和可行的补偿策略。内源性因素包括目标农药自身结构性质及食用菌基质成分,采用基质净化等方法可进行补偿;外源性因素是指样品制备过程引入或检测系统中存在的聚合物残留物、有机酸等成分,采用稀释法等策略可有效补偿。通过对基质效应的产生及补偿进行综述,以期为食用菌农药残留准确检测方法的开发提供参考。China has a large production of edible fungi,however,the food safety and residents,health face a great threat due to the serious pesticide residue issues on edible fungi.Although various detection techniques have good heterogeneity and resolution,the matrix effect seriously affects the accuracy of detection.Present studies related to matrix effects rise a great interest on the feasible factors and solutions,which lacks of the discussion on mechanism of matrix effects and relative complemental strategies referring to endogenous and exogenous factors.Therefore,this paper focused on the analysis of the influence mechanism and feasible compensation strategies from the perspective of endogenous and exogenous factors of matrix effect.Endogenous factors included the structural properties of the target pesticides and the matrix components of edible fungi,which could be compensated by methods like matrix purification.Exogenous factors refer to the introduction of polymer residues,organic acids and other components in the sample preparation processing or the detection system,which could be effectively compensated by strategies like dilution method.This paper also reviewed the generation/influence and compensation of matrix effect in order to provide reference for the development of accurate detection methods for pesticide residues in edible fungi.
