摘 要:牛磺酸来源于蛋氨酸和半胱氨酸代谢,是一种具有强酸的磺酸性两性离子β-氨基酸,含有一个酸性磺酸基、一个碱性氨基和介于两者之间的两个碳,在生理pH范围内表现出较强的水溶性和较差的亲脂性。由于没有羧基,牛磺酸不参与蛋白质合成,属于半必需氨基酸。牛磺酸的理化性质使其成为各种基本生理过程的理想调节剂,具有维持体内稳态、胆汁酸合成、抗氧化应激、抗炎、保护心血管、保护中枢神经系统和参与免疫调节等多种功能。近年来,随着低蛋白日粮的推广和集约化工厂化生产普及,畜禽的抗病能力受到巨大挑战,有必要在日粮中合理添加牛磺酸。因此,文章介绍了牛磺酸在动物生理和动物营养领域的研究进展,旨在为广大畜牧从业人员提供参考。Taurine,derived from the metabolism of methionine and cysteine,is a strong acidic sulfonic acid zwitterionicβ-amino acid that contains an acidic sulfonic group,an alkaline amino group,and two carbons in between.It exhibits strong water solubility and poor lipophilicity within the physiological pH range.Due to the absence of carboxyl groups,it does not participate in protein synthesis and is a semi es⁃sential amino acid.The physicochemical properties of taurine make it an ideal regulator for various basic physiological processes,with various functions such as maintaining homeostasis,bile acid binding,anti⁃oxidant stress,anti-inflammatory,protecting cardiovascular,protecting central nervous system,and par⁃ticipating in immune regulation.In recent years,with the promotion of low protein diets and the popular⁃ization of intensive factory production,the disease resistance of livestock and poultry has been greatly challenged.It is necessary to add taurine reasonably to the diet.Therefore,the research progress of tau⁃rine in the fields of animal physiology and animal nutrition were introduced in this article,aiming to pro⁃vide reference for the majority of livestock practitioners.
