摘  要:使用失水山梨醇聚氧乙烯醚(20)和氢化二聚酸、12-羟基硬脂酸合成了一种新型乳化剂,考察了催化剂的种类、催化剂用量、反应温度、反应时间、脂肪酸比例对产品酸值、皂化值、产品色泽和乳化能力的影响。结果表明,使用真空酯化法,以单丁基氧化锡作为催化剂,催化剂用量为反应物质量的1%,反应温度150℃,反应时间5 h,氢化二聚酸和12-羟基硬脂酸摩尔比7∶3时得到的乳化剂颜色较浅,且性能优于吐温80。由于该乳化剂结构中不含碳碳双键,因此具有较好的热稳定性和耐黄变性,特别适用于工作温度较高和对产品颜色要求较高的乳化体系。A new emulsifier is synthesized by using sorbitol polyoxyethylene ether(20),dimer acid and 12-hydroxystearic acid.The type of catalyst,the amount of catalyst,reaction temperature,reaction time and the ratio of fatty acids on the acid value,saponification value,product color and emulsifying capacity of the product are investigated.The results show that the emulsifier obtained by vacuum esterification method has lighter color and better emulsifying property than Tween 80 and span-80 when monobutyltin oxide is used as the catalyst,and the catalyst amount is 1%of the reactant mass,the reaction temperature is 150 ℃,the reaction time is 5 h,and the molar ratio of hydrodimeric acid to 12-hydroxy-stearic acid is 7 to 3.Because the emulsifier does not contain carbon-carbon double bonds in its structure,it has good thermal stability and yellowing resistance,and is especially suitable for emulsification systems with high working temperature and high requirements for product color.
