摘 要:本文采用CIELab系统方法研究酸性坏境下蔓越莓花青素偏硅酸矿泉水溶液的颜色参数特征,并研究溶液pH值和花青素含量与颜色参数的相关性。结果表明:溶液的pH在2.0~3.5范围时,花青素偏硅酸矿泉水溶液均呈红色系,溶液的酸度相同时,随着花青素浓度越大,样品的明度L^(*)值降低,红度a^(*)值、黄度b^(*)值增加,饱和度C^(*)ab和色调角H^(*)ab值也增加,即样品越红;花青素浓度相同时,随pH值的增大,样品的明度L^(*)值增加,红度a^(*)值、黄度b^(*)值减小,饱和度C^(*)ab和色调角H^(*)ab值也减小,即样品的红色色调越弱。Pearson相关性分析表明花青素含量与溶液颜色参数均呈显著相关性,与L^(*)值为负相关,其他为正相关;pH值与颜色参数中a^(*)、b^(*)、C^(*)ab和H^(*)ab显著负相关,与明度L^(*)不相关。pH值和花青素含量对溶液的颜色特征均具有一定的影响。Our present study used CIELab system to study the color parameters of cranberry anthocyanin metasilicic mineral water solution under acidic environment and to explore the correlation of pH value and anthocyanin content with color parameters.The results show that when the pH of the sample is in the range of 2.0-3.5,the anthocyanin metasilicic mineral water solutions are all red.When the acidity of the solution is the same,with the increase of anthocyanin concentration,the brightness L^(*)value of the sample decreases,the redness a^(*)value and the yellowness b^(*)value increase,and the saturation C^(*)ab and hue Angle H^(*)ab value also increase,that is,the more red the sample appears.At the same concentration of anthocyanins,with the increase of pH value,the brightness L^(*)value of the sample increases,the redness a^(*)value,the yellowness b^(*)value decreases,the saturation C^(*)ab value and the hue Angle H^(*)ab value also decrease,that is,the red hue of the sample is weaker.Pearson correlation analysis showed that anthocyanin content was significantly correlated with color parameters of solution,and was negatively correlated with L^(*)value,and positively correlated with others.pH is negatively correlated with a^(*),b^(*),C^(*)ab and H^(*)ab in color parameters,but not with brightness Both pH value and anthocyanin content have certain influence on the color characteristics of the solution.
