摘  要:基于实际住宅厨房和烹饪过程,建立物理模型并进行厨房环境CFD模拟,模拟结果与实测结果吻合很好。提出基于专用空调设备、双排风口油烟机和空气幕的厨房环境优化策略,对优化前后环境进行数值模拟对比分析。结果表明:优化后夏季备菜阶段的平均温度下降15.7%,烹饪阶段平均温度下降20%,人体周围CO_(2)平均浓度接近380 ppm,人体呼吸区域油烟平均浓度接近0 ppm;优化后冬季备菜阶段的平均温度上升了65.4%,烹饪阶段平均温度上升了136%,人体呼吸区CO_(2)平均浓度不到500 ppm,人体呼吸区域油烟平均浓度接近0 ppm。Based on the actual residential kitchen and cooking process,a physical model was established and CFD simulation of the kitchen environment was carried out,and the simulation results were in good agreement with the measured results.A kitchen environment optimization strategy based on dedicated air conditioning equipment,double-vent hoods and air curtains was proposed,and numerical simulations were conducted to compare and analyze the environment before and after optimization.The results show that after optimization,the average temperature of the preparation stage in summer decreased by 15.7%,the average temperature of the cooking stage decreased by 20%,the average concentration of CO_(2) around the human body is close to 380 ppm,and the average concentration of grease smoke in the human body's respiratory area was close to 0 ppm.After optimization,the average temperature of the preparation stage in winter increased by 65.4%,the average temperature of the cooking stage increased by 136%,and the average temperature of human respiratory area is close to 0 ppm,increased by 136%,the average concentration of CO_(2) in the human breathing zone was less than 500 ppm,and the average concentration of oil smoke in the human breathing zone is close to 0 ppm.
