摘 要:提升食用菌产业链韧性是保障食用菌产业稳步发展的有效途径,也是践行大食物观的应有之义。本文基于食用菌产业链不同环节的视角,阐释食用菌产业链韧性的内涵,重点分析大食物观下食用菌产业链韧性面临的现实挑战,并提出相应对策。分析表明,我国食用菌产业链从生产、加工到流通都面临着诸多现实问题,如生产面临的极端气候风险增加,生产规模和形式有待优化,菌种“卡脖子”问题;精深加工及高值化开发能力不足,加工设备和行业标准亟待更新,食用菌有机副产物资源化循环利用不够充分;产品结构不协调、质量参差不齐,产业品牌建设滞后等。据此,提出深化产业科技创新支撑、提高生产链抵御风险和抵抗冲击能力,强链补链提质增效、优化加工链动态演进和持续增长能力,对标高标准国际水平、缓释食用菌跨境供应链脆弱性等对策建议。Enhancing the resilience of the edible mushroom industry chain is an effective way to ensure the stable development of the edible mushroom industry and is also inherent requirement in practicing the concept of All-encompassing Approach to Food.This article focused on analyzing the realistic challenges and improvement strategies of the resilience of the edible mushroom industry chain from the perspective of different links,based on All-encompassing Approach to Food.Current research indicated that edible mushroom industry chain in China faces many practical problems from production,processing to distribution.Based on this situation,it proposed to deepen industrial technological innovation support,strengthen the ability of production chain to resist risk impacts,enhance and supplement the chain for quality and efficiency improvement,optimize the processing chain for dynamic evolution and continuous growth,align with high international standards,and mitigate the vulnerability of the cross-border supply chain for edible mushrooms.
