摘 要:豆粕由于营养价值丰富,蛋白含量高且各氨基酸之间比例均衡,是我国畜禽最主要的植物蛋白源。但近年来我国豆粕资源紧缺,大量依赖进口,可持续性低,因此,在需求端降低蛋白水平,提供营养价值更高的发酵豆粕,改善其在断奶仔猪中的消化利用率和安全性,同时节约大豆饲料资源,是推进我国豆粕减量替代和畜牧业可持续发展的必要途径。文章综合评价不同微生物条件下,发酵豆粕的营养品质和其在断奶仔猪中的应用价值,以期为发酵豆粕在仔猪中的应用提供相关理论基础。Soybean meal is the main source of plant proteins for livestock and poultry in China,due to its rich nutritional value,high protein content and balanced ratio of amino acids.However,in recent years,soybean meal resources are in short supply in China,a large number of dependence on imports,and low sustainability.Hence,reducing protein levels at the demand end,providing higher nutritional value of fermented soybean meal,improving its digestive utilization and safety on weaned piglets,and saving soybean feed resources were the necessary ways to promote the substitution of soybean meal reduction and sustainable development of animal husbandry in China.In this paper,the nutritional qualities of fermented soybean meal under different microbial conditions and its application value in weaned piglets were comprehensively evaluated to provide a theoretical basis for the application of fermented soybean meal in piglets.
