摘 要:畜牧养殖业的迅速发展,使得我国饲料原料日益短缺。如何有效利用农副产物生产饲料,尤其是生产蛋白饲料,已成为研究的热点。我国是苹果主产区,在苹果加工过程中产生大量的苹果渣,通过微生物发酵苹果渣,可降低发酵产物中的纤维素水平,增加粗蛋白质的含量,提高苹果渣的营养价值。本文从苹果渣发酵的主要菌种、菌种组合及发酵方式等方面阐述其生产畜禽饲料的研究现状,以期为大规模发酵苹果渣生产生物饲料提供思路和参考。In the recent years,the rapid development of animal husbandry has led to an increasing shortage of feed raw materials.How to effectively utilize agricultural by-products to produce feed,especially produce protein feed,has become a research hotspot.China is the major apple producing area in the world,and a large amount of apple pomace is produced during the apple processing.Through microbial fermentation,the cellulose content of the apple pomace could be reduced,while the protein content would be increased,and the nutritional value of apple pomace can be improved.In order to provide ideas and references for the large-scale production of fermented apple pomace,in this paper,the representative strains and the way there combinations,as well as the fermentation methods used in the fermentation of apple pomace were summarized.
