摘  要:饮食文化研究是开展社会整体文化研究的重要切入口。糕是晋北的传统食物,但并非仅作果腹之用。在当地生态和历史环境的共同形塑下,逐渐生成了一种以糕为核心的食文化。通过对晋北糕的做法、吃法和应用场合等一系列文化事项进行深描,从文化功能论的角度阐释糕在晋北社会中所发挥的礼的教化、规范行为、强化认同、促进交往等社会文化功能,挖掘传统饮食文化价值的同时,从中管窥地方社会文化内核,有助于深化人们对传统饮食生成的文化土壤和社会基质的认识,并丰富国内饮食人类学的个案研究。The research of food culture is an important entrance to the study of the overall social culture.The millet cake is a traditional food in northern Shanxi Province and is not just about food.Under the combined action of the local ecology and historical environment,a food culture with millet cake as the core has gradually formed.Based on the deep description of the cake-making,eating and consumption methods of a series of cultural matters,from the perspective of cultural function theory,it explains the social and cultural functions of millet cake,such as courtesy education,standardizing behaviour,strengthening identity and promoting communication in the northern Shanxi society.While excavating the value of traditional food culture,we can see the core of local society and culture,which helps to deepen the understanding of the cultural soil and social conventional substrate of traditional diet generation and to enrich the case study of Chinese food anthropology.
