摘 要:食品微生物检验检测是学生集体用餐配送单位食品安全管理工作中的重要环节,检验检测结果是衡量食品被污染程度以及判断食品是否可被食用的重要依据,可直接影响学生用餐安全。基于此,本文结合自身工作经验,针对集体用餐配送单位的特点,从场地环境、仪器设备、培养基及试剂、检测人员、检验过程等方面进行微生物实验室检验检测能力建设的研究,为学生集体用餐配送单位规范、科学地开展微生物检验检测工作提供参考。Food microbiological inspection and testing is an important part of food safety management in student collective dining distribution units.The inspection and testing results are an important basis for measuring the degree of food contamination and judging whether the food is edible,which can directly affect the safety of student meals.Based on this,this paper combines its own work experience and focuses on the characteristics of collective dining distribution units to study the construction of microbiological laboratory inspection and testing capabilities from the aspects of site environment,instruments and equipment,culture media and reagents,testing personnel,and inspection process,so as to provide a reference for the standardized and scientific microbiological inspection and testing work of student collective dining distribution units.
