摘 要:茯茶属黑茶类,为后发酵茶,因其独特的制作工艺和保健功效在茶叶消费市场备受欢迎,发展潜能较大,并逐步成为茶学研究重点之一。文章以中国知网(CNKI)和Web of Science(WOS)数据库近30年茯茶和茯砖茶相关文献作为数据源,利用Excel对相关文献的发表年份、文献来源、机构作者、关键词和摘要进行统计分析;并利用CiteSpace软件对中外文文献的关键词、作者和机构进行可视化分析,探究茯茶研究热点和发展趋势。结果表明,近年来茯茶文献研究方向的多样性在一定程度上有所提高,茯茶的相关研究领域经历了缓慢起步阶段、逐渐发展阶段和全面发展提升阶段3个时期。随着政策扶持和研究引领,茯茶科学研究和产业发展正在逐渐提升。研究结果对确定目前茯茶研究热点、探究茯茶产业化发展方向和未来发展趋势具有重要参考价值。Fu tea belongs to the post-fermented black tea,which has its own characteristics in nutrition function and processing technology.In this paper,literatures related to Fu tea and Fu brick tea from the WOS and CNKI databases over the past 30 years as data sources.Excel was used to perform statistical analysis on the publication year,literature sources,institutions,authors,keywords and abstracts.CiteSpace software was also used to conduct a visual analysis on the key words,authors and organizations of the literatures both at home and abroad in order to explore the research hotspots and development trends of Fu tea.These results show that in recent years,the research direction of the Fu tea has been diversified to a certain extent,and the research field has also experienced three stages:slow initial stage,gradual development stage and comprehensive development stage.With the policy support and research guidance,the scientific research and industrial development of the Fu tea are gradually improving.This paper provided important references to confirm the research hotspots and explore the industrialization development direction and future development trend of the Fu tea.
