摘  要:人造肉被誉为十大新兴技术之一,近年来,作为一种可持续发展的肉类替代品备受关注。本文探究国内外人造肉领域的研究现状与技术发展态势,以期为中国人造肉领域的研究与发展提供参考。基于国内外近十年人造肉领域的专利数据,从发展态势、国家与机构布局、主要技术领域、高价值专利和法律状态方面进行量化分析,揭示人造肉领域发展趋势与研究热点,并提出该领域技术发展和专利布局的建议,旨在为我国人造肉领域的发展提供借鉴。Artificial meat,hailed as one of the top ten emerging technologies,has gained significant attention in recent years as a sustainable alternative in the food industry.In order to explore the research status and technological development trends in the field of artificial meat both domestically and internationally,with the goal of providing insights for research and development in this field in China.Through quantitative analysis based on patent data in the field of artificial meat from both domestic and international sources,various aspects including scale and trends,countries and institutions,main technical fields,high-value patents and legal status,hot topics,and emerging trends are examined.Suggestions on technology development and patent layout in this field are put forward,aiming to provide references for the development of China’s artificial meat field.
