摘  要:从腐乳中分离出一株解淀粉芽孢杆菌F-1,所分泌的胞外产物富含蛋白质和多糖,为了探究其胞外产物的潜在功效性和应用价值,通过抑菌实验、自由基清除实验和细胞实验探究其抗菌性、抗氧化性和抗炎等活性。实验结果表明,2%的胞外产物便能够抑制痤疮丙酸杆菌(Cutibacterium acnes)的生长和清除近50%的DPPH自由基(IC50=2.776%),在细胞水平上胞外产物表现出较强的抗氧化应激和抗炎的能力,0.01%对H_(2)O_(2)诱导的HFF-1活性氧的降低作用达到最强,胞外产物在0.1%内都能够显著地降低RAW264.7的白介素因子6和白介素因子10。Bacillus amyloliquefaciens strain F-1 was isolated from fermented bean curd in laboratory.The extracellular products secreted by B.amyloliquefaciens strain F-1 are rich in protein and polysaccharide.To explore the potential efficacy and application value of the extracellular products,the antibacterial activity,antioxidant activity and anti-inflammatory activity were investigated by antibacterial test,free radical scavenging test and cell test.The results showed that 2%of the extracellular products could inhibit the growth of Cutibacterium acnes and scavenge nearly 50%of DPPH free radicals(IC50=2.776%).At the cellular level,the extracellular products showed strong anti-oxidative stress and anti-inflammatory capabilities.The concentration of 0.01%had the strongest effect on the reduction of HFF-1 reactive oxygen species induced by H_(2)O_(2),and the extracellular products could significantly reduce the interleukin-factor 6 and interleukin-factor 10 of secreted by RAW264.7 within 0.1%concentration.
