摘  要:在头部品牌汾酒的带领下,清香型白酒站在新的发展高度和历史起点上,拉开了“三分天下”有其一的序幕。中国汾酒城作为清香型白酒最大的原酒生产基地,生产优质生态原酒是酒企的品质核心,因此多方位分析研究生态原酒品质对于产品质量的持续提升至关重要。本研究对新产大曲清香型原酒不同感官评语酒样结合理化数据进行分析,总结它们之间的规律,以期为后续原酒的勾调和贮存提供依据,提高清香型原酒质量,推动白酒的高质量发展。Under the leadership of the leading brand Fenjiu,Qingxiang Baijiu has occupied one third of the Baijiu market.China Fen-jiu City is the largest production base of Qingxiang Baijiu,and the production of high-quality ecological crude liquor is the core of the quality pursuit of the enterprise.Therefore,multi-dimensional analysis of the quality of the crude liquor is essential for the contin-uous improvement of product quality.This paper analyzes the relationship between the sensory characteristics and the physicochemi-cal indexes of the newly-produced Daqu Qingxiang crude liquor,so as to provide reference for the blending and storage of the crude liquor,to improve the quality of the crude liquor,and to promote the high-quality development of Baijiu industry.
