摘 要:近年来,食品新零售业态快速发展,其食品安全是社会的关注焦点,而快速检测技术已成为新零售业态食品安全检测的重要技术支撑。因此,本文综述了新零售业态食品安全快速检测中常用的试纸比色法、速测管比色法、酶抑制率法、免疫层析法等几种快速检测技术的研究与应用现状,同时,对新零售食品安全快速检测技术进行了展望,以期为后续相关研究提供参考。In recent years,the new retail formats have developed rapidly,and its food safety has become a focus of social attention.Rapid detection technology has become an important support for food safety detection in the new retail formats.Therefore,in this work,we review the research and application status of several commonly used rapid detection technologies for food safety in new retail formats,such as strip colorimetry,rapid tube colorimetry,enzyme inhibition rate method,and immunochromatography.At the same time,in order to provide a reference for subsequent relevant research,we provide a prospect fo the rapid detection technology for food safety in new retail formats.
