摘  要:超高压技术(HPP)是食品加工安全领域的先进技术之一,非热处理方式具有对乳制品营养价值破坏较小,有效杀灭微生物、延长保质期和保持乳制品原有风味等优点,被认为是替代热处理的适宜加工方式。“优质”与“安全”是“优质乳工程”良性发展亟需平衡的“双刃剑”。本文介绍HPP的基本原理和特点,分析其在乳品工业中的应用,特别是在优质乳工程中的应用前景和发展趋势,为HPP在优质乳工程中的广泛应用提供理论支撑。High pressure processing technology is one of the advanced technologies in the field of food processing safety today.Due to its non heat treatment method,it minimizes the degradation of nutritional content in dairy products while effectively eliminating microorganisms,prolonging shelf life and preserving the original flavor profile.Therefore,it is considered a viable alternative to thermal treatment.Quality and safety have always been the double-edged sword that needs to be balanced in the benign development process of Quality Milk Project.This paper introduced the basic principles and characteristics of high pressure processing technology,analyzed the application of high pressure processing technology in the dairy industry,especially the application prospects and development trends in high-quality milk engineering,and provided theoretical support for the widespread application of high pressure processing technology in high-quality milk engineering.
