摘 要:列举了近些年部分动物性水产干制品中N-二甲基亚硝胺检测不合格信息和处罚信息,介绍N-二甲基亚硝胺的安全风险及化学特性。就如何防控该指标限量方面,围绕加强原料控制、生产过程控制、N-二甲基亚硝胺前体物控制、加强生产人员管理知识培训等方面提出个人见解,并建议生产经营企业建立健全食品质量安全管理体系,根据企业实际制定N-二甲基亚硝胺防控规范,以开展动态防控。The unqualified information and punishment information of N-dimethyl nitrosamine in some animal dried aquatic products in recent years were listed,and the safety risks and chemical characteristics of N-dimethyl nitrosamine were introduced.In terms of how to prevent and control the limit of this indicator,personal opinions were put forward on strengthening the control of raw materials,strengthening the control of production process,the control of N-dimethylneneneba nitrosamine precursors,strengthening the management knowledge training of production personnel,etc.,and it was suggested that production and operation enterprises established and improved the food quality and safety management system,and formulate the N-dimethylnenenebb nitrosamine prevention and control specifications according to the actual situation of enterprises to carry out dynamic prevention and control.
