摘 要:试验旨在研究辽宁绒山羊的肉用品质和利用。试验选择10只来自3个不同饲养模式羊场的绒山羊(公羊6只,母羊4只),屠宰后取其前腿、后腿和背最长肌,利用气相色谱法测定各部位肌内脂肪酸组成及含量。结果显示,辽宁绒山羊肌肉中饱和脂肪酸(SFA)含量为84.32mg/100g,以长链棕榈酸和硬脂酸为主,各部位SFA、短链脂肪酸(SCFA)的含量差异均不显著(P>0.05)。辽宁绒山羊肌肉中不饱和脂肪酸(UFA)含量为138.83mg/100g,其中单不饱和脂肪酸(MUFA)和多不饱和脂肪酸(PUFA)平均含量分别为111.63、27.20mg/100g。后腿中PUFA含量极显著高于前腿和背最长肌(P<0.01),后腿和背最长肌中n-6PUFA含量极显著高于前腿(P<0.01)。各部位肌肉中油酸、棕榈油酸、亚麻酸、花生四烯酸含量较高,DHA含量由高到低为背最长肌>前腿>后腿。研究表明,辽宁绒山羊肌肉中脂肪酸营养价值高,后腿肉脂肪酸组成优于背最长肌和前腿。The experiment aimed to study the meat quality and utilization of Liaoning Cashmere goats.The trial selected 10 cashmere goats from three different breeding mode farms(six male goats and four female goats),and after slaughtering,the forelimbs,hind limbs,and the longest back muscles were taken to determine the intramuscular fatty acid composition and content of each part using gas chromatography.The results showed that the content of SFA in Liaoning Cashmere goat muscles was 84.32 mg/100 g,mainly composed of long-chain palmitic acid and stearic acid,with no significant difference in SFA and SCFA content among the parts(P>0.05).The content of UFA in Liaoning Cashmere goat muscles was 138.83 mg/100 g,with the average content of MUFA and PUFA being 111.63,and 27.20 mg/100 g,respectively.The content of PUFA in the hind limbs was extremely higher than that in the forelimbs and the longest back muscles(P<0.01),and the content of n-6 PUFA in the hind limbs and the longest back muscles was extremely higher than that in the forelimbs(P<0.01).The contents of oleic acid,palmitoleic acid,linoleic acid,and arachidonic acid in the muscles of each part were relatively high,and the content of DHA was in the order of the longest back muscles>forelimbs>hind limbs.
