摘  要:富含糖类、氨基酸的中药在加工制造过程中普遍伴随着美拉德反应的发生,该反应不仅会影响中药的色泽和气味,而且会产生一些具有生物学活性和毒性的反应产物,从而影响中药的药性和功效。为了最大程度地发挥中药药效,降低其不良反应,该文对美拉德反应的机制与历程、影响因素、反应物和产物的分析方法、常见产物的药理毒理作用进行了介绍。同时着重对部分代表性中药展开详细分析,介绍了中药在加工过程前后因美拉德反应发生的性状、成分、功效等变化。最后从美拉德反应的影响因素入手,通过调整加工方式和添加抑制剂两个方面对中药和食品中用于调控美拉德反应的措施进行综述,旨在为中药的加工制造提供方法和思路,从而得到高品质的中药饮片及制剂。The processing and manufacturing of traditional Chinese medicine(TCM),which is rich in sugars and amino acids,is commonly accompanied by the occurrence of the maillard reaction(MR).MR not only affects the color and odor of TCM,but also produces some biologically active and toxic reaction products,thus affecting the medicinal properties and efficacy of TCM.In order to maximize the efficacy of Chinese medicines and reduce their toxic side effects,this paper introduces the mechanism and history of the maillard reaction,the influencing factors,the analytical methods of the reactants and products,and the pharmacological and toxicological effects of the common products.At the same time,we focus on the detailed analysis of some representative Chinese medicines,and introduce the changes in traits,composition and efficacy of Chinese medicines before and after processing due to the maillard reaction.Finally,starting from the influencing factors of the maillard reaction,the measures used to regulate the maillard reaction in traditional Chinese medicine and foodstuffs are reviewed by adjusting the processing method and adding inhibitors,aiming to provide methods and ideas for the processing and manufacturing of traditional Chinese medicine,so as to obtain high-quality traditional Chinese medicine tablets and preparations.
