摘  要:试验旨在探究斑蝥黄微胶囊产品制备的优化工艺参数。通过单因素试验,分析溶剂类别、溶解温度和时间以及微胶囊包埋壁材、乳化剂等因素对微囊化斑蝥黄产品的影响,确定了斑蝥黄最佳溶解工艺条件、微囊化最佳包埋壁材与乳化剂;然后通过正交试验分析,针对产品感观质量和稳定性等因素,得出了合理的微囊化斑蝥黄10%冷水溶性(Cold Water Solubility,CWS)产品配方。结果表明:最佳工艺条件是以二氯甲烷作溶剂,溶解温度50℃,瞬时溶解时间少于5 min,且斑蝥黄与二氯甲烷的最佳比值为12∶135。斑蝥黄微囊化过程中最佳包埋壁材为木质素磺酸盐,最佳乳化剂为抗坏血酸棕榈酸酯;产品配方为斑蝥黄12%、DL-α生育酚4.5%、抗坏血酸棕榈酸酯3.5%、大豆磷脂3.0%、木质素磺酸盐35%、麦芽糊精22%、玉米淀粉20%。“瞬时溶解、二次乳化和均质、双重包埋”技术的应用可在很大程度上提高斑蝥黄微胶囊产品的稳定性、水溶性、安全性以及生物利用率。The purpose of this experiment was to explore the preparation method of a high-quality canthaxanthin microcapsule product through process optimization and formulation screening,and to study its properties.Through single factor test,the influences of solvent type,dissolution temperature and time,microencapsulated wall material and emulsifier on microencapsulated canthaxanthin products were analyzed,and the optimal dissolution process conditions,microencapsulated best embedded wall material and emulsifier were determined.Then through orthogonal experiment analysis,a reasonable formulation of 10%Cold Water Solubility(CWS)of microencapsulated canthaxanthin was obtained in view of factors such as the sensory quality and stability of the product.The results showed that the optimum process conditions were dichloromethane as solvent,dissolution temperature was 50℃,instantaneous dissolution time was less than 5 min,and the optimum ratio of canthaxanthin to dichloromethane was 12∶135.In the process of canthaxanthin microencapsulation,the best embedding wall material was lentisulfonate and the best emulsifier was ascorbyl palmitate.The product formula is canthaxanthin:12%,DL-alpha tocopherol:4.5%,ascorbyl palmitate:3.5%,soybean phospholipid:3.0%,Lentisulfonate:35%,maltodextrin:22%,corn starch:20%.The application of"instantaneous dissolution,secondary emulsification and homogenization,double embedding"technology can greatly improve the stability,water solubility,safety and bioavailability of canthaxanthin microcapsule products.
