摘 要:为明确楠竹笋及其附属物中的挥发性物质,本试验借助GC-MS技术测定了笋肉、嫩笋壳、老笋壳三个部位的挥发性成分,并开展分析与比较。结果表明,从3个部位中共分离鉴定出31种化合物,嫩笋壳中化合物种类最多,高达24种;其次是老笋壳(16种),笋肉中的挥发性化合物最少,仅为12种。根据官能团的不同进行分类,老笋壳共含有醇、醛、酸、酮、烷、烯、酯7个大类挥发性化合物,而笋肉和嫩笋壳中不含有烯类挥发性化合物;三个部位中相对含量最多的均为酯类成分,分别占挥发性成分的29.36%、62.50%、18.86%。烯类化合物仅在老笋壳中检出,且仅有诱虫烯一种,含量高达15.277%,是老笋壳中含量第二多的物质;通过聚类分析发现有7种共有的化合物,分别为2,3-辛二酮、2-己醇、己酸、正二十一烷、正己醛、棕榈酸甲酯、棕榈酸乙酯,而由内至外三个部位独属的化合物分别有2、11、4种。To clarify the volatile comounds present in the shoot flesh,young shoot shells,and old shoot shells of Phyllostachys edulis,this study utilized GC-MS technology to conduct qualitative and quantitative measurements and comparative analysis.The results revealed a total of 31 compounds across the three parts.The young shoot shells had the highest number of compounds,reaching 24,followed by the old shoot shells with 16,and the shoot flesh with the fewest,at only 12.Classified by functional groups,the old shoot shells contained 7 major types of volatile compounds:alcohols,aldehydes,acids,ketones,alkanes,alkenes,and esters.In contrast,alkenes were absent in both the shoot flesh and young shoot shells.The most abundant volatile components in all three parts were esters,accounting for 29.36%,62.50%,and 18.86% of the volatile compounds,respectively.Alkenes were only detected in the old shoot shells,with only a compound,9-Tricosene,(Z)-,present at 15.277%,making it the second most abundant substance in the old shoot shells.Cluster analysis identified 7 common compounds:2,3-Octanedione,2-Hexanol,Hexanoic acid,Eicosane,Hexanal,Methyl palmitate,and Ethyl palmitate,with 2,11,and 4 unique compounds in each part,respectively.
