摘  要:针对目前差压预冷冷库内湿度低、干耗大的问题,本文提出将冰浆湿冷系统与差压预冷相结合,设计并搭建了一套新型差压式冰浆湿冷预冷实验台。以西红柿为预冷对象,研究了包装箱开孔结构对系统预冷性能和西红柿失重率的影响。结果表明:开孔个数对西红柿预冷时间和预冷速率的影响较小,而开孔率的增加使得预冷时间缩短、预冷速率增加。开孔个数越多且开孔率越大,西红柿在预冷过程中的温度变异系数峰值越小,即预冷均匀性越好;当开孔个数为9个(开孔率20%)、开孔率为25%(开孔个数4个)时,温度变异系数峰值分别为0.004 6和0.003 6。西红柿的失重率随开孔个数的增加而增加、开孔率的增加而降低,且总体失重率均在0.1%左右,远低于传统差压预冷系统中西红柿的失重率。Aiming at the problems of low humidity and high dry consumption in the present differential pressure precooling room,the combination of the ice slurry wet cooling system with the differential pressure precooling is proposed,and a novel differential pressure ice slurry wet precooling test platform is designed and built in this paper.Taking tomatoes as precooling objects,the effects of opening structure of packaging box on the system and tomatoes are studied.The results showed that the number of openings has little effect on the precooling time and the precooling rate of tomato,while the increase of opening ratios shorten the precooling time and increase the precooling rate.The more the number of openings and the greater the opening ratio,the smaller the peak value of the temperature variation coefficient during the precooling process,that is,the better the precooling uniformity.When the number of openings is 9(the opening rate of 20%)and the opening rate is 25%(the number of openings of 4),the peak values of temperature variation coefficient are 0.0046 and 0.0036,respectively.The weight loss ratio of tomatoes increases with the increase of the number of openings and decrease with the increase of the opening ratios.The overall weight loss ratio is about 0.1%,which is much lower than that of tomatoes in the traditional differential pressure precooling system.
