摘 要:桑叶属药食两用性植物原料,其所含蛋白质丰富、氨基酸种类齐全,是一种优质的植物蛋白资源。桑叶除被用于传统养蚕饲料外,还具有巨大的多元化市场应用潜力。近年来,多肽由于其优异的生物活性、溶解和吸收性等特点而备受研究学者关注,桑叶蛋白肽相关研究也日渐增多。本文围绕当前桑叶蛋白肽制备方法、生物学功效及应用等方面的研究进行综合分析,概述归纳桑叶蛋白肽具有的抗氧化性、降血糖和降血压等活性,并对桑叶蛋白肽在医药、食品和饲用等领域应用情况进行总结和展望,以期为未来桑叶蛋白肽相关研究和多元化应用提供参考。Mulberry leaves are homology of medicine and food resources with rich proteins and amino acid species,which make them regarded as high-quality plant protein materials.Mulberry leaves can not only be used traditionally in rearing silkworms but can also be developed for diverse market applications.In recent years,peptide research has attracted much more attention due to its excellent biological activity,solubility,and absorption characteristics.Increasing research are outcome of the mulberry leaf protein peptide.This paper comprehensively summarizes and analyzes the preparation technology,biological efficacy,and application of mulberry leaf protein peptide.The activity related to antioxidant,antidiabetic,and antihypertension,and their application in medicine,food,and feeding fields are summarized and prospected,which aims to help the development of future research and the diversifying application of mulberry leaf protein peptides.
