摘  要:花生在生长、收获和储存的每个阶段,都有可能遭受真菌毒素的污染。当此类受黄曲霉毒素污染的花生及其制品,如花生酱和花生油等食品被人体摄入后,会给健康带来一定的风险。脱毒法降解黄曲霉毒素B_(1)具有精准、温和的优点,保持物质原有结构和活性,高效且环保,广受社会认可。本文通过查阅已发表的科技文献,从黄曲霉毒素B1的毒性、危害、限量标准、污染现状和脱毒技术等多个方面,对国内不同地区花生及其制品中黄曲霉毒素B1的污染状况进行分析,旨在为制定和修订花生及其制品中黄曲霉毒素B1限量标准提供重要的参考依据。Peanuts may be contaminated with mycotoxins at every stage of growth,harvesting,and storage.When such aflatoxincontaminated peanuts and their products,such as peanut butter and peanut oil,are ingested by the human body,it will bring certain risks to health.Detoxification degradation of Aflatoxin B_(1) has the advantages of accuracy and gentleness,maintaining the original structure and activity of the substance,high efficiency and environmental protection,and is widely recognized by the society.By referring to the published scientific and technological literature,the pollution status of AFlatoxin B_(1) in peanut and its products in different regions of China was analyzed from the aspects of toxicity,harm,limit standard,pollution status and detoxification technology,so as to provide an important reference for formulating and revising the limit standard of AFlatoxin B_(1) in peanuts and their products.
