摘  要:为有效解决双孢蘑菇在贮藏过程中的品质劣变问题。本文以百里香酚(TE)为芯材,β-环糊精(β-CD)为壁材制备包合物,增强芯材稳定性并使其达到缓释效果。将改性木薯淀粉(CH-AA)与TE/β-CD包合物按不同质量比(0∶2、0.5∶1.5、1∶1、1.5∶0.5、2∶0)混合,以壳聚糖作为基质,制备一种淀粉基抗菌保鲜垫。通过扫描电镜、红外光谱、X射线衍射对其结构特征进行了系统性表征,百里香酚被成功包埋,丙烯酸接枝成功,制备的CH-AA和TE/β-CD包合物可以成功加载并稳定在壳聚糖基材中。厚度、力学性能、水触角、抗菌性能、抗氧化性能试验结果表明,CH-AA的添加有助于保鲜垫力学性能的提升,TE/β-CD包合物的添加有助于保鲜垫抗菌性、抗氧化活性的增强。将保鲜垫应用于双孢蘑菇的保鲜实验,结果表明,添加CH-AA和TE/β-CD包合物制成的保鲜垫能有效维持双孢蘑菇硬度、色泽,延缓失重率、菌落总数的上升。其中CH-AA和TE/β-CD包合物的质量比为1∶1的保鲜垫综合效果最佳,在8 d的贮藏实验中失重率仅达8.3%,与空白对照的(9.7±0.1)CFU/g相比,处理组中双孢蘑菇菌落总数仅为(7.2±0.3)CFU/g。该保鲜垫能有效抑制微生物繁殖,延缓双孢蘑菇的腐烂变质,在双孢蘑菇的采后贮藏保鲜中具有很好的应用前景。To effectively solve the problem of quality deterioration during storage of agaricus bisporus,thymol(TE)as the core material andβ-cyclodextrin(β-CD)as the wall material were used to prepare a complex.The complex could enhance the stability of core materials and make the core materials release slowly.Then,a kind of starch-based antibacterial fresh-keeping pad was prepared by mixing the grafted cassava starch(CH-AA)with TE/β-CD complex in different mass ratios(0∶2,0.5∶1,1∶1,1.5∶1,2∶0)in the chitosan matrix.The structural characteristics of the pads were systematically studied by scanning electron microscopy,Fourier transform infrared spectroscopy,and X-ray diffraction.The results show that TE is successfully embedded,acrylic acid is successfully grafted,the prepared CH-AA and TE/β-CD complex could be successfully loaded and stabilized in the chitosan matrix.The test results of thickness,mechanical properties,water tentacles,antibacterial properties and antioxidant properties show that the addition of CH-AA increases the mechanical properties of the fresh-keeping pads,and the addition of TE/β-CD complex effectively enhances antibacterial and antioxidant activities of the fresh-keeping pads.Finally,the prepared pads were evaluated for their fresh-keeping effect on agaricus bisporus.The preservation parameters show that the fresh-keeping pads containing CH-AA and TE/β-CD complex could effectively maintain the hardness and color of agaricus bisporus,delay the increase in weight loss rate and total bacterial count.The fresh-keeping pads containing CH-AA and TE/β-CD complex with a mass ratio of 1∶1 has the best fresh-keeping effect during a storage test of 8 d,showing a weight loss rate of only 8.32%.Compared with the total bacterial count[(9.66±0.13)CFU/g]of the blank control,the total bacterial count in treatment group is only(7.23±0.27)CFU/g.The fresh-keeping pads could effectively inhibit the proliferation of microorganism and delay the deterioration of agaricus bisporus,which has broad applicati
