摘 要:食用油在提取工艺和使用过程中容易受到多环芳烃(PAHs)的污染,苯并芘(BaP)是PAHs中致癌性最强物质之一.快速筛选油品质量对食品行业质检和政府监管具有重要意义.在实际检测中,由于油样基质复杂,繁琐的样品预处理过程极大限制了检测速度.文章以植酸功能化的金(Au)、银(Ag)纳米粒子(IP_(6)@Au,IP_(6)@Ag)为基底材料,用表面增强拉曼光谱(SERS)技术快速检测食用油中的BaP.结果显示:IP_(6)@Au对BaP有较高的检测灵敏度,最低可检测的质量浓度为0.252µg·L^(-1);对5种食用油样品进行直接筛查,均检出BaP.开发的BaP检测方法有望用于食用油中PAHs的快筛和食品安全质量把控.Benzo[a]pyrene(BaP)is one of the most carcinogenic substances in polycyclic aromatic hydrocarbons(PAHs),which will be produced in the extraction process and usage of edible oil.Rapid screening of oil quality is significant to the food industry and government regulation.In practical testing,the complex matrix of oil samples and the intricate sample pretreatment process greatly limit detection speed.This study utilized phytic acid decorated gold(Au)and silver(Ag)nanoparticles(IP_(6)@Au,IP_(6)@Ag)as substrates and employed surface enhanced Raman spectroscopy(SERS)for the rapid detection of BaP in edible oils.The results demonstrate that IP_(6)@Au exhibits high sensitivity to BaP,with a minimum detectable concentration of 0.252μg·L^(-1).BaP was detected in five types of edible oil samples screened directly.The BaP detection method developed in this study holds promise for rapid screening of PAHs in edible oils and ensuring food safety and quality control.
