摘 要:目的分析2018—2022年深圳市市售猪肉、牛肉和鸡蛋中17种二噁英(polychlorinated dibenzo-pdioxins and dibenzofurans,PCDD/Fs)和12种二噁英类多氯联苯(dioxin-like polychlorinated biphenyls,DL-PCBs)的浓度水平及趋势变化,评估人群的膳食风险,为相关研究标准提供数据支持。方法于2018—2020年和2022年采集食品样本,采用高分辨气相色谱/高分辨双聚焦磁式质谱联用技术对样本中的污染物进行定量分析检测。结果共采集样本120份,牛肉中二噁英类化合物的浓度(1.410 pg TEQ/g脂肪)高于猪肉(0.266 pg TEQ/g脂肪)和鸡蛋(0.384 pg TEQ/g脂肪)(P<0.01);牛肉样本中PCDD/Fs+DL-PCBs的浓度水平随着年份变化整体呈上升趋势;成年居民通过三类食物摄入的总PCDD/Fs+DL-PCBs水平为0.645~0.761 pg WHO-TEQ/kg b.w.。结论牛肉是二噁英类化合物污染的高风险食品,未来应持续重点监测。居民通过食用猪肉、牛肉和鸡蛋摄入的PCDD/Fs+DL-PCBs水平低于欧洲食品安全局制定的最大容许摄入量。Objective This study aimed to investigate the concentrations and trends of 17 polychlorinated dibenzo-pdioxins and dibenzofurans(PCDD/Fs)and 12 dioxin-like polychlorinated biphenyls(DL-PCBs)in commercially available pork,beef,and eggs in Shenzhen City from 2018 to 2022.Additionally,the dietary risks for the population were evaluated to provide a critical basic database for the establishment of maximum levels of PCDD/Fs and DL-PCBs in food items by the government.Methods During 2018-2020 and 2022,the concentrations of PCDD/Fs and dioxinlike PCBs were analyzed and quantified by high-resolution gas chromatography/high-resolution dual-focusing magnetic sector mass spectrometry.Results A total of 120 food samples were collected.The concentrations of dioxin-like compounds in beef(1.410 pg TEQ/g fat)were higher than in the other two food categories(pork:0.266 pg TEQ/g fat,eggs:0.384 pg TEQ/g fat)(P<0.01).The concentration level of PCDD/Fs+DL-PCBs in beef samples showed an overall upward trend over the years.The total dietary intake of PCDD/Fs+DL-PCBs for adult residents through the consumption of egg,pork,and beef was(0.645-0.761)pg WHO-TEQ/kg b.w.Conclusions Beef was the high-risk food for PCDD/Fs and DL-PCBs in Shenzhen and continuous key monitoring was necessary in the future.The estimated intake of PCDD/Fs and DL-PCBs through the ingestion of pork,beef,and egg for the local population was below the provisional tolerable weekly intake(PTWI)set by the European Food Safety Authority.
