摘 要:随着氮气气调储存技术在粮食储备中的推广应用取得明显成效,为探索氮气气调储存技术对小红高粱品质的影响,本研究以新收获的小红高粱为原料,分别对使用大于等于99%浓度的氮气包装和散装的小红高粱进行研究,将包装样品和散装样品分别放入模拟温度(高温条件:温度30℃,湿度RH70%;常温条件:温度25℃,湿度RH70%;低温条件:温度20℃,湿度RH70%)条件下的培养箱中储存360 d,每60 d取一次样。通过对小红高粱储存品质、过氧化氢酶酶活动度、加工品质RVA特征值的测定和分析,探索小红高粱储存的适宜条件。在实际应用中,可以为不同温度地区储存小红高粱找到最适宜的、最经济有效的储存方案。The promotion and application of nitrogen controlled atmosphere storage technology in grain reserves have achieved obvious results.In order to explore the influence of nitrogen controlled atmosphere storage technology on the quality of Xiaohong sorghum,we took newly harvested Xiaohong sorghum as the research object,and analyzed the effect of nitrogen packaging(nitrogen concentration≥99%)and bulk packaging,respectively.The packaged samples and bulk samples were placed in incubators under simulated storage conditions(high-temperature conditions:30℃,RH 70%;normal temperature conditions:25℃,RH 70%;low-temperature conditions:20℃,RH 70%)and stored for 360 days.Samples were taken every 60 days.Through the analysis of the storage quality,catalase activity,and RVA characteristic values of the samples,the suitable storage conditions for Xiaohong sorghum were determined.In practice,the most suitable and most economical storage scheme can be found for Xiaohong sorghum in regions with different temperatures.
