摘 要:该试验旨在探究不同养殖模式对罗非鱼生长性能及脆化效果的影响。试验采集了池塘养殖模式和简易帆布池养殖模式的罗非鱼,比较其生长性能、生化指标、抗氧化指标和肌肉品质的差异。结果表明:不同养殖模式对罗非鱼体重存在显著差异(P<0.05),对其体长、肥满度、脏体比、肝体比、头肾指数均无显著差异(P>0.05);对其血清生化指标和血清、肝脏、肠道和肌肉抗氧化指标无显著差异(P>0.05);帆布池组罗非鱼肌肉的弹性、黏聚性、胶着性和咀嚼性均显著大于池塘组(P<0.05),而肌肉硬度、黏性、回复性和粗蛋白、粗脂肪和灰分均无显著差异(P>0.05)。综上所述,在同等条件下利用帆布池养殖的罗非鱼肌肉弹性、黏聚性、胶着性和咀嚼性更好,肉质脆化效果更佳。The purpose of this experiment is to explore the effects of different culture modes on the growth performance and crisping effect on tilapia.Tilapia were collected from pond culture mode and simple canvas tank culture mode in the experiment to compare the growth performance,biochemical indexes,antioxidant indexes and muscle quality.The results showed that:there were significant differences in body weight of tilapia between different culture modes(P<0.05),and there were no significant differences in body length,condition fatness,viscerasomatic index,hepatosmatic index,head kidney index(P>0.05);there were no significant in serum biochemical indexes and antioxidant indexes of serum,liver,intestinal tract and muscle(P>0.05);the elasticity,cohesion,adhesion and chewiness of the muscle of the tilapia in the canvas pool group was significantly higher than pond group(P<0.05),while there were no significant differences in muscle hardness,stickiness,resilience and crude protein,crude fat and ash(P>0.05).In conclusion,under the same conditions,tilapia raised in canvas pools have better muscle elasticity,cohesiveness,gelation,and chewiness,with a more desirable meat tenderization effect.
