双季高粱采后贮藏品质差异分析

摘　　要：收集了16份高粱种质资源,采用双季种植方式,贮藏1年后检测高粱籽粒成分含量的差异。贮藏1年后主季、再生季的高粱籽粒中总酚、总黄酮、总游离氨基酸、单宁、粗纤维、粗脂肪、可溶性蛋白、可溶性总糖、直链淀粉及花青素等成分含量均有差异。通过对品质进行分析,发现在贮藏1年后,双季高粱有些品种中的部分品质指标含量会降低,说明这些品种贮藏时间不宜过长;而有些品种的品质指标含量则会有所增加,说明延长贮藏时间有利于这些品种品质指标含量的积累,适合作为酿酒原料、饲料的品种。本研究为高粱籽粒采后贮藏保鲜提供理论依据,对今后酿酒高粱品种的选育及酿酒原料选择具有一定的指导意义。16 sorghum germplasm resources were collected,double-cropping method was used,and the difference of grain composition content of sorghum was detected after 1 year of storage.The contents of total phenols,total flavonoids,total free amino acids,tannins,crude fiber,crude fat,soluble protein,total soluble sugars,amylose and anthocyanins in sorghum grains in the main season and regeneration season after 1 year of storage were different.Through the quality analysis,it was found that after 1 year of storage,some quality indicators in some varieties decreased,indicating that the storage time of these varieties should not be too long.However,quality indicators of some varieties increased,indicating that prolonging the storage time was conducive to the accumulation of quality index content of these varieties,and they are suitable as raw materials and feed for winemaking.This study provides a theoretical basis for post harvest storage and preservation of sorghum grains,and has certain guiding significance for the breeding of sorghum varieties and the selection of raw materials for winemaking in the future.
