摘　　要：餐饮业是数字化推动传统产业转型发展的重要场景,是稳增长、促消费、扩就业、惠民生的重要产业。通过梳理餐饮业数字化发展阶段和关键要素,围绕餐饮业全产业链从线上化、平台化、智能化三个维度,探索并构建餐饮业数字化衡量指标体系,并从产业链、区域等维度综合测算分析我国餐饮业数字化发展特征与驱动因素。研究结果表明,从产业链环节看,销售环节是最先高效应用互联网和移动技术的领域;从区域层面看,东部沿海地区领跑餐饮业数字化指数,中心城市和发达省份带动区域整体飞跃;从主要驱动因素看,平台成为推动餐饮业数字化发展的关键力量,数据要素是餐饮业实现智能化的重要基础要素,以在线外卖等为代表的数字新业态引领全国餐饮业数字化发展。结合餐饮业数字化指数特征,进一步从餐饮业数据要素化、餐饮业产业链重要环节数字化、餐饮业平台企业发展、餐饮业区域协调发展等角度提出相关发展建议。The catering industry is an important scene for digital transformation,and is an important industry for stabilizing growth,promoting consumption,expanding employment,and benefiting people’s livelihoods.This research explores and constructs a digital measurement index system for the catering industry from three dimensions:online,platform based,and intelligent,by sorting out the stages and key elements of digital development in the catering industry.It comprehensively calculates and analyzes the characteristics and driving factors of digital development in China’s catering industry from the dimensions of industry chain and region.The research results show that from the perspective of the industrial chain link,the sales link is the first field to effectively apply the Internet and mobile technology;From a regional perspective,the eastern coastal region leads the digitalization index of the catering industry,while central cities and developed provinces drive the overall leap of the region;From the perspective of the main driving factors,platforms have become a key force in promoting the digital development of the catering industry.Data elements are an important foundation for the intelligent realization of the catering industry,and digital new formats such as online food delivery are leading the digital development of the catering industry nationwide.Based on the characteristics of the digitalization index in the catering industry,this study proposes relevant development suggestions from the perspectives of data elementization in the catering industry,digitalization of important links in the catering industry chain,development of catering platform enterprises,and coordinated development of catering industry regions.
