摘 要:为探究水果中重金属残留的主要来源及其对食品安全的影响,采用原子吸收分光光度法对市售苹果、葡萄和柑橘等常见水果中铅、镉、砷和汞等重金属含量进行检测分析。研究结果表明,水果中重金属残留主要来源于土壤污染、农药施用、灌溉用水及大气沉降等途径。不同种类水果中重金属含量存在显著差异,其中以表皮富集最为明显。通过对照国家食品安全标准,评估了重金属残留对人体健康的潜在风险,并提出相应的控制措施和建议。In order to investigate the main sources of residual heavy metals in fruits and their effects on food safety,the contents of lead,cadmium,arsenic and mercury in common fruits such as apples,grapes and citrus were detected and analyzed by atomic absorption spectrophotometry.The results showed that the heavy metal residues in fruits mainly came from soil pollution,pesticide application,irrigation water and atmospheric sedimentation.There were significant differences in the content of heavy metals in different kinds of fruits,especially in the epidermis.The potential risk of heavy metal residues to human health was assessed by comparing with national food safety standards,and corresponding control measures and suggestions were put forward.
