摘  要:不饱和脂肪酸(UFA)在生物体内广泛存在,参与诸多生命活动并发挥重要生理功能。然而,由于官能团少,且存在大量同分异构体,UFA的结构鉴定和精细解析面临诸多问题。质谱(MS)分析选择性高、灵敏度好,且可提供分子质量信息和碎片信息,已成为检测UFA的主要方法。从脂肪碳链解析、双键位置解析和顺反异构解析等3个途径,综述了用于UFA结构表征的MS分析方法,并展望其发展趋势(引用文献101篇)。Unsaturated fatty acids(UFA)exist widely in organisms,participate in many life activities and play important physiological functions.However,due to the poor functional groups and the existence of a large number of isomers,the structural identification and detailed analysis of UFA face many challenges.Mass spectrometry(MS)analysis has become the main method for the detection of UFA because of its high selectivity,good sensitivity,and the ability to provide molecular mass and fragmentation information.The MS analysis methods for structural characterization of UFA were summarized from the 3 ways of the fat carbon chain analysis,double bonds position analysis and cis-trans isomerism analysis,and the development trend of MS analysis methods was prospected(101 ref.cited).
