摘 要:试验旨在研究不同饲养方式对文昌鸡肉质性状、脂肪酸、氨基酸及挥发性风味物质的影响。选取21日龄的文昌鸡母鸡30只,随机分为2组,每组15个重复,每个重复1只鸡,笼养组饲喂玉米-豆粕型饲粮,散养组饲养在橡胶林下,早晚补给饲粮。试验期90 d。结果显示,散养组胸肌重极显著高于笼养组(P<0.01),鸡肉黄度值极显著低于笼养组(P<0.01),胸肌剪切力极显著高于笼养组(P<0.01),胸肌肌纤维直径极显著高于笼养组(P<0.01),肌纤维密度极显著低于笼养组(P<0.01)。笼养组胸肌粗蛋白含量极显著高于散养组(P<0.01)。散养组胸肌赖氨酸、天冬酰胺与谷氨酰胺含量显著高于笼养组(P<0.05),组氨酸含量极显著高于笼养组(P<0.01)。笼养组丙氨酸含量极显著高于散养组(P<0.01)。散养组胸肌花生四烯酸、十七烷酸含量显著或极显著高于笼养组(P<0.05或P<0.01),笼养组胸肌中棕榈烯酸含量显著高于散养组(P<0.05)。散养组文昌鸡胸肌中挥发性风味物质组成优于笼养组。研究表明,散养组胸肌肉色更佳,胸肌内功能性氨基酸、脂肪酸及风味物质的含量及组成优于笼养文昌鸡,说明散养文昌鸡肉品质更好。The experiment was to study the effects of different feeding methods on meat quality traits,fatty acids,amino acids and volatile flavor compounds of Wenchang chicken.A total of thirty 21-day-old Wenchang chickens were selected randomly divided into two groups with 15 replicates per group and one chicken per replicate.The caged group was fed a corn-soybean meal diet,while the free-range group was fed under rubber forest with morning and evening supplemental diet.The test period was 90 days.The results showed that breast muscle weight in free-range group was extremely higher than that in caged group(P<0.01).The color yellowness of in free-range group was extremely lower than that in caged group(P<0.01),the chest muscle shear force was extremely higher than that in caged group(P<0.01),the chest muscle fiber diameter was extremely higher than that in caged group(P<0.01),and the muscle fiber density was extremely lower than that in caged group(P<0.01).The crude protein content in breast muscle of in caged group was extremely higher than that in free-range group(P<0.01).The contents of lysine,asparagine and glutamine in breast muscle of in free-range group were significantly higher than those in caged group(P<0.05),and the content of histidine was extremely higher than that in caged group(P<0.01).The alanine content of in caged group was extremely higher than that in free-range group(P<0.01).The contents of arachidonic acid and heptadecanoic acid in chest muscle of free-range rearing group were significantly higher than those of cage rearing group(P<0.05 or P<0.01),and the content of palmitoleic acid in breast muscle in caged group was significantly higher than that in free range group(P<0.05).The composition of volatile flavoring substances in breast muscle in free-range group was better than that in caged group.The study indicates that the breast muscle color is better in free-range group,and the content and composition of functional amino acids,fatty acids and flavor substances in breast muscle are better than those
