摘  要:为探讨低温除湿闭式烘烤对翠碧1号烟叶致香物质含量的影响,以主脉不脱水烟叶为对照,设置不同主脉脱水率处理(10%~30%),对不同处理烤后烟叶的致香物质含量进行比较分析。结果表明:采用低温低湿烘烤工艺烘烤后,与对照相比,主脉脱水处理B2F和C3F烟叶的美拉德反应产物、苯丙氨酸类降解产物、类胡萝卜素降解产物、西柏烷类降解产物和新植二烯等致香物质含量均有不同程度的提高,且主脉脱水(20±2)%处理表现最好,其美拉德反应产物、苯丙氨酸类降解产物、类胡萝卜素降解产物、西柏烷类降解产物和新植二烯的总含量分别较对照提高了7.66%(B2F)和13.35%(C3F)、14.67%(B2F)和10.17%(C3F)、13.07%(B2F)和22.39%(C3F)、14.89%(B2F)和9.45%(C3F)、16.37%(B2F)和13.22%(C3F)。本研究结果为翠碧1号烟叶烘烤技术和工艺的选择提供了参考。In order to investigate the effect of low temperature dehumidification and closed curing on the content of odorant in Cuibi No.1 tobacco leaves,the main vein non-dehydrated tobacco leaves were treated with different dehydrating rates(10%~30%).The results show that,after baking with low temperature and low humidity,the contents of neutral aromatic substances such as maillard reaction products,phenylalanines,carotenoid degradation products,siparanes and neophytadiene in B2F and C3F tobacco leaves after main vein dehydration treatment were increased to varying degrees compared with the control,and T2 treatment had the best effect.The total contents of Maillard reaction products,phenylalanine products,carotenoid degradation products,siparane products and neophytadiene were increased by 7.66%(B2F)and 13.35%(C3F),14.67%(B2F)and 10.17%(C3F),13.07%(B2F)and 22.39%(C3F),respectively),14.89%(B2F)and 9.45%(C3F),16.37%(B2F)and 13.22%(C3F).The results of this study provide a reference for the selection of Cuibi No.1 tobacco curing technology and process.
