摘 要:选择产地为广西壮族自治区贵港市平南县、安徽省六安市雷山县、广西壮族自治区梧州市苍梧县的3种桂皮作为研究对象,测定3种桂皮的燃烧热、燃烧稳定性、脂肪、粗纤维、灰分、微量元素、氨基酸。结果表明,3种桂皮燃烧热在8564.42~14518.27 J/g,顺序为广西壮族自治区梧州市苍梧县>广西壮族自治区贵港市平南县>安徽省六安市雷山县;燃烧稳定性在0.35~0.69,顺序为广西壮族自治区贵港市平南县>安徽省六安市雷山县>广西壮族自治区梧州市苍梧县;粗纤维含量在24.45%~34.92%,顺序为安徽省六安市雷山县>广西壮族自治区梧州市苍梧县>广西壮族自治区贵港市平南县;脂肪含量在0.92%~1.04%,顺序为广西壮族自治区贵港市平南县>安徽省六安市雷山县>广西壮族自治区梧州市苍梧县;灰分含量在2.66%~4.24%,顺序为安徽省六安市雷山县>广西壮族自治区贵港市平南县>广西壮族自治区梧州市苍梧县。燃烧热、燃烧性(桂皮的燃烧稳定性)、脂肪含量、灰分、粗纤维、微量元素、氨基酸含量多指标的顺序为安徽省六安市雷山县>广西壮族自治区贵港市平南县>广西壮族自治区梧州市苍梧县。本研究建立3种桂皮的多指标分析及评价体系,为桂皮的质量评价及其综合利用提供一定的理论基础和科学指导。Three kinds of cinnamon from Pingnan County,Guigang City,Guangxi Zhuang Autonomous Region,Leishan County,Liu′an City,Anhui Province,and Cangwu County,Wuzhou City,Guangxi Zhuang Autonomous Region were selected as the research objects to determine the heat of combustion,stability of combustion,fat,crude fiber,ash,trace elements,and amino acids of the three kinds of cinnamon.The results showed that the heat of combustion of the three kinds of cinnamon ranged from 8564.42 to 14518.27 J/g,in the following order:Cangwu County,Wuzhou City,Guangxi Zhuang Autonomous Region>Pingnan County,Guigang City,Guangxi Zhuang Autonomous Region>Leshan County,Liu′an City,Anhui Province.The stability of combustion ranged from 0.35 to 0.69,in the following order:Pingnan County,Guigang City,Guangxi Zhuang Autonomous Region>Leshan County,Liu′an City,Anhui Province>Cangwu County,Wuzhou City,Guangxi Zhuang Autonomous Region.The crude fiber content between 24.45%and 34.92%,in the order of Leishan County,Liu′an City,Anhui Province>Leishan County,Wuzhou City,Guangxi Zhuang Autonomous Region>Pingnan County,Guigang City,Guangxi Zhuang Autonomous Region.The fat content between 0.92%and 1.04%,in the order of Pingnan County,Guigang City,Guangxi Zhuang Autonomous Region>Leishan County,Liu′an City,Anhui Province>Cangwu County,Wuzhou City,Guangxi Zhuang Autonomous Region.The ash content between 2.66%and 4.24%,in the following order:Leishan County,Luian City,Anhui Province>Pingnan County,Guigang City,Guangxi Zhuang Autonomous Region>Cangwu County,Wuzhou City,Guangxi Zhuang Autonomous Region.The order of heat of combustion,combustibility(combustion stability of cinnamon),fat content,ash,crude fiber,trace elements,and amino acid content of multiple indicators was:Leishan County,Luian City,Anhui Province>Pingnan County,Guigang City,Guangxi Zhuang Autonomous Region>Cangwu County,Wuzhou City,Guangxi Zhuang Autonomous Region.This study establishes the multi-indicator analysis and evaluation system for three kinds of cinnamon,which provides a certai
