摘  要:大豆皂苷是一种由三萜皂苷元与糖类结合形成的化合物,在植物界中广泛存在并具有多种生物学功能,豆粕中所含0.5%左右的大豆皂苷被视为一种抗营养因子。低剂量的大豆皂苷会对水产动物产生积极影响,而高剂量的大豆皂苷则会产生抗营养等消极影响。本文综述了大豆皂苷的生物学功能以及不同剂量大豆皂苷对水产动物生长性能、抗氧化、免疫、炎症和肠道健康的影响及其相关潜在机制,以期为合理限定大豆皂苷在水产饲料中的使用量提供参考,从而避免过量的大豆皂苷对水产动物产生不利影响。Soybean saponins(SAPs),a class of compound formed by the combination of triterpenoid saponin and sugar,widely exists in plant and has many biological functions.Low doses of SAPs have positive effects on aquatic animals,while high doses of SAPs can produce negative influences including anti-nutrition.In this paper,the biological functions of SAPs and its effects with different doses on the growth performance,antioxidation,immunity,inflammatory,and intestinal health of aquatic animals were reviewed.Additionally,the related potential mechanisms were discussed.This review can provide certain references for the reasonable use constrictions of SAPs in aquatic diets,so as to help to avoid the adverse effects of excessive SAPs on aquatic animals.
