咖啡产业乡村在地化实践中的市场层级构建——以云南保山新寨村为例

摘  要:在云南保山市新寨村,咖啡产业从商业咖啡到精品咖啡的在地化实践表明,这一过程并非完全遵循了单一的市场链或产业链在传统乡村社会的嵌入,而是市场主体在阶段性分化的同时,嵌入并维持了三重市场层级的差异化运作,具体呈现为以咖啡公司为核心的一般市场、以普通咖农为主体的熟人市场以及以精英咖农主导的泛熟人市场并存的层级结构。市场层级构建的内在逻辑在于资源与资本的差异化配置及转换,特别是以社会资本为中介形式的各类资本的转换。同时,三重市场层级在产品生产、市场信息、客户群体等方面的互补中共构了乡村咖啡市场的完整体系。咖啡产业的在地化实践促使传统乡村社会的部分解构与分化,同时也催生了乡村主体与外部社会和市场衔接的多样可能。The localization of the coffee industry from“commercial coffee”to“specialty coffee”in Xinzhai Village,Baoshan City,indicates that this process does not fully comply with the single market chain or the industrial chain embedding in the traditional rural society,but rather the differentiated operation of the triple market hierarchy embedded and maintained by market entities during the stage differentiation. Specifically,the hierarchical structure consists of the general market with coffee companies as the core,the acquaintance market with ordinary coffee farmers as the main body,and the pan-acquaintance market dominated by elite coffee farmers. The inherent logic of market hierarchy construction lies in the differentiated allocation and transformation of resources and capital,especially the transformation of various types of capital mediated by social capital. Meanwhile,the three levels of the market complement each other in terms of product production,market information,and customer groups,forming a complete rural coffee market system. The localization practice of the coffee industry has led to the partial deconstruction and differentiation of traditional rural society,while also giving rise to diverse possibilities for the connection between rural entities and external society and markets.
