牛骨胶原蛋白肽酒制备及对小鼠酒后肝损伤的保护作用

摘　　要：为考察牛骨胶原蛋白肽酒对小鼠酒后肝损伤的保护作用,首先测定几种生物活性肽的体外抗氧化活性指标,经筛选,牛骨胶原蛋白肽具有良好的抗氧化活性且符合肽酒制备的感官基本要求。采用生理盐水、53%乙醇、牛骨胶原蛋白肽酒分别灌胃小鼠,测定小鼠血清中相关生化指标,并分析肝组织切片。结果表明:与模型组相比,牛骨胶原蛋白肽酒组小鼠血清谷丙转氨酶和谷草转氨酶活性均显著降低(P<0.01)。在组织病理学观察中,牛骨胶原蛋白肽酒组的小鼠相较于模型组肝损伤轻,说明牛骨胶原蛋白肽酒对小鼠急性酒精性肝损伤具有保护作用。To investigate the protective effect of bovine bone collagen peptide wine against alcoholic liver injury in mice,the in vitro antioxidant activities of several bioactive peptides were assessed firstly.The bovine bone collagen peptides exhibited significant antioxidant activity and satisfied the basic sensory requirements for the production of peptide wine.Mice were respectively administered with physiological saline,53% ethanol,and bovine bone collagen peptide wine via gavage,and relevant biochemical indicators in serum were measured,and liver tissue sections were analyzed.The results indicated that compared to the model group,serum alanine aminotransferase and aspartate aminotransferase activities in the bovine bone collagen peptide wine group were significantly reduced(P<0.01).Histopathological observations revealed that mice in the bovine bone collagen peptide wine group experienced less liver damage than those in the model group.These findings suggest that bovine bone collagen peptide wine provides a protective effect against acute alcoholic liver injury in mice.
