摘 要:目的分析济南市居民膳食中蔬菜的有机磷农药残留水平和累积暴露水平,评价济南市居民蔬菜中有机磷农药残留累积膳食急性暴露风险。方法采用2016—2020年济南市食品安全风险监测项目的蔬菜中农药残留风险监测数据,应用相对效能因子法和简单分布模型,以甲胺磷作为指标化合物,计算不同人群蔬菜中有机磷农药的累积暴露水平。结果济南市一般消费人群和高消费人群以及不同性别、不同年龄人群蔬菜中有机磷农药的膳食累积暴露在P_(50)、P_(95)、P_(97.5)、P_(99)水平上均低于健康指导值,处于安全水平。≥18岁人群的暴露风险较小,一般消费成人在P_(95)、P_(97.5)和P_(99)水平上,累积暴露量分别占急性参考剂量值的0.24%、0.29%、0.37%;高消费量的成人在P_(95)、P_(97.5)和P_(99)水平上,累积暴露量分别占急性参考剂量值的0.96%、1.17%、1.55%,均处于安全水平。蔬菜中有机磷农药累积暴露风险随着年龄增长逐步降低。结论济南市居民经蔬菜摄入有机磷农药的累积膳食急性暴露风险处于安全水平。Objective To analyze the organophosphorus pesticide residue levels and cumulative exposure levels of vegetables in the diet of residents in Jinan City,and to evaluate the cumulative dietary acute exposure risk assessment of organophosphorus pesticide residues in vegetables.Methods Taking methamidophos as an index compound,the pesticide residue monitoring data in vegetables from the Jinan Food Safety Risk Monitoring Project from 2016 to 2020,and the relative potency factor method and a simple distribution model were used to calculate the cumulative exposure levels of organophosphorus pesticides in vegetables of different groups of people.Methods The cumulative dietary exposure to organophosphorus pesticides in Jinan’s general and high-consumption groups,as well as different genders and age groups,at P_(50),P_(95),P_(97.5),and P_(99)levels were all lower than the health guidance values and were at safe levels.The exposure risk for people over 18 years old was very small,for adults with general consumption,at the P_(95),P_(97.5)and P_(99)levels,the cumulative exposure accounted for 0.24%,0.29%and 0.37%of the ARfD(acute reference dose)value respectively.For adults with high consumption,the cumulative exposure accounted for 0.96%,1.17%and 1.55%of the ARfD value at P_(95),P_(97.5)and P_(99)levels,respectively,which were all at safe levels.The cumulative exposure risk of organophosphorus pesticides in vegetables gradually decreased with age.Conclusion The cumulative dietary acute exposure risk of organophosphorus pesticides ingested by residents in Jinan City through vegetables is at a safe level.
