摘  要:以奇亚籽为原料,采用热处理辅助水酶法提取奇亚籽油,优化其提取工艺,并测定奇亚籽油的成分。通过试验筛选出适宜的酶制剂后,研究液料比、酶添加量以及酶解时间对奇亚籽油提取率的影响;在此基础上,以液料比、酶添加量、酶解时间为变量,奇亚籽油提取率为指标,进行响应面试验,调整最优的提取条件。结果表明:以中性蛋白酶为水解酶时,奇亚籽油的最佳提取工艺条件为酶添加量4.5%、液料比9:1 mL/g、酶解时间2.0 h,奇亚籽油的提取率为75.12%。对油脂成分进行气相色谱质谱法测定,共检出20种组分,含量较高的分别是亚油酸甲酯和亚麻酸甲酯,分别占比18.61%和64.25%。Using chia seeds as raw materials,heat treatment assisted enzymatic method was used to extract chia seed oil,its extraction process was optimized,and the composition of chia seed oil was determined.After screening suitable enzyme preparations through experiments,the effects of liquid to material ratio,enzyme addition amount,and enzymatic hydrolysis time on the extraction rate of chia seed oil were studied.On this basis,response surface experiments were conducted with liquid to material ratio,enzyme addition amount,and enzymatic hydrolysis time as variable,and chia seed oil extraction rate as the index to adjust the optimal extraction conditions.The results showed that when neutral protease was used as the hydrolytic enzyme,the optimal extraction conditions for chia seed oil were enzyme addition of 4.5%,liquid to material ratio of 9:1 mL/g,enzyme hydrolysis time of 2.0 h,and the extraction rate of chia seed oil was 75.12%.A total of 20 oil components were detected by gas chromatography-tandem mass spectrometry(GC-MS).The higher contents were methyl linoleate and methyl linolenic acid,accounting for 18.61%and 64.25%,respectively.
