摘 要:2023年上海全年社会消费品零售总额1.85万亿元,增长12.6%,规模再创历史新高,保持全国城市首位。其中公共餐饮消费占据了重要组成部分,餐饮业发展持续向好,市场需求旺盛,作为食品安全的重要一环,餐饮食品和复用餐饮具还存在着一定的食品安全风险,餐饮具作为盛放食品的容器,与消费者的口部直接接触,其卫生状况直接关系到消费者的身体健康。部分餐饮服务经营者食品安全意识薄弱,公共卫生知识培训缺乏,食品安全监管有待持续加强。民以食为天,食以安为先,在上海这个超特大城市的新的餐饮经营模式,新的餐饮发展方向下,结合现阶段公共餐饮里复用餐饮具的现状问题以及风险推动下的市场监管升级对食品检测机构的进一步要求,作者根据上海市公共餐饮的发展情况,对复用餐饮具的检测结果以及餐饮具风险点发生的原因做具体的探索,以顺应餐饮行业的发展需求,保障新时代消费者的权益,为餐饮服务食品安全监管机制提供依据。In 2023,the total retail sales of consumer goods in Shanghai reached 1.85 trillion yuan,an increase of 12.6%,reaching a new historical high and maintaining the top position among cities in the country.Among them,public catering consumption occupies an important part,and the catering industry continues to develop well with strong market demand.As an important part of food safety,catering food and reusable catering utensils also have certain food safety risks.Catering utensils,as containers for storing food,come into direct contact with consumers’mouths,and their hygiene condition directly affects their physical health.Some catering service operators have weak food safety awareness,lack public health knowledge training,and food safety supervision needs to be continuously strengthened.Food is the top priority for the people,and food safety is the top priority.In the new catering business model and development direction of Shanghai,a super mega city,combined with the current situation of reusing catering utensils in public catering and the further requirements of market supervision and upgrading under risk promotion for food testing institutions,the author conducts specific explorations based on the development of public catering in Shanghai,the testing results of reusing catering utensils,and the reasons for the occurrence of risk points in catering utensils,in order to meet the development needs of the catering industry,protect the rights and interests of consumers in the new era,and to provide a basis for the food safety supervision mechanism in catering services.
