不同胎次戈壁红驼驼乳的基本成分、氧化应激和炎性因子研究

摘  要:驼乳营养价值丰富,有着“沙漠黄金”的美誉,近年来越来越受到人们的关注。文章采集1胎次(P1)、3胎次(P3)和5胎次(P5)戈壁红驼驼乳各10批次,分析乳常规成分、氨基酸、维生素、抗氧化能力和炎性因子水平。结果表明,戈壁红驼驼乳的酸度、脂肪、蛋白质、非脂乳固体和乳糖含量分别为20.25μg Trolox/mL、5.83%、4.42%、10.05%和4.86%。不同胎次之间氨基酸水平无显著差异(P>0.05);不同胎次总抗氧化能力(T-AOC)、超氧化物歧化酶(SOD)和1,1-二苯基-2-三硝基苯肼(DPPH)自由基差异显著(P<0.05),丙二醛(MDA)和过氧化氢酶(CAT)胎次间无显著差异(P>0.05);VA、VC和VD胎次间差异显著(P<0.05),白细胞介素1β(IL-1β)、白细胞介素2(IL-2)、白细胞介素10(IL-10)和肿瘤坏死因子α(TNF-α)胎次差异显著(P<0.05)。综上,戈壁红驼驼乳营养价值较高,氨基酸丰富,含有较高的VA、VC和VD,具有重要的开发利用价值,但是不同胎次之间维生素、抗氧化能力和炎症因子指标差异显著,具体的机理还需要进一步研究。文章可为进一步研究与开发驼乳提供理论依据。Camel milk has the reputation of"desert platinum"because of its rich nutritional value,which has greatly attracted people's attention in recent years.Collect 10 batches of Gobi red camel milk from the first parity(P1),third parity(P3),and fifth parity(P5)respectively,and analyze the levels of routine milk components,amino acids,vitamins,antioxidant capacity,and inflammatory factors.The results showed that the acidity,contents of fat,protein,non-fat milk solids and lactose in Gobi camel milk were 20.25μg Trolox/mL,5.83%,4.42%,10.05%and 4.86%,respectively.There was no significant difference in amino acid levels among three treatment groups.The contents of total antioxidant capacity(T-AOC),superoxide dismutase(SOD)and 1,1-dipheny-2-picryhydrazyl free radical(DPPH)had significant difference(P<0.05),but no difference in malondialdehyde(MDA)and catalase(CAT)(P>0.05).Moreover,the contents of VA,VC and VD among three groups had significant difference(P<0.05).There were significant differences in interleukin1β(IL-1β),IL-2,IL-10 and tumor necrosis factor(TNF-α)among three groups(P<0.05).In summary,Gobi red camel milk has high nutritional value,rich amino acids,high VA,VC and VD,and has important development and utilization value.However,there are significant differences in vitamins,antioxidant capacity and inflammatory factors between different parities,and the specific mechanism needs further study.This research will provide theoretical basis for further investigating and developing camel milk.
