摘 要:山药在我国分布广、产量大,是应用广泛的药食同源品种。在山药采收加工过程中产生大量非药用部位及副产物(如山药茎、叶、皮、珠芽等),只能作为垃圾被遗弃、掩埋或焚烧,造成严重的资源浪费和环境污染。综述山药皮、茎、叶和珠芽的化学成分及其综合利用研究进展,以期为山药资源的合理开发利用提供参考。Chinese yam is a widely used edible and medicinal variety with wide distribution and large yield in China.When Chinese yam is harvested and processed,a large number of non-medicinal parts and by-products(such as stems,leaves,barks,and buds)can only be abandoned,buried,or burned as garbage,resulting in serious waste of resources and environmental pollution.This paper reviewed the chemical components of barks,stems,leaves,and buds of Chinese yam and their comprehensive utilization to provide a reference for rational development and utilization of Chinese yam resources.
