山苍子精油复合抑菌膜的制备、表征及应用

摘  要:为开发新型食品包装膜,提高食品包装膜的抗菌和抗氧化性能,以天然山苍子精油作为抑菌剂,制备不同添加量(0.25%~1%,以质量分数计)山苍子精油的壳聚糖-明胶复合抑菌膜。采用扫描电镜(SEM)、X射线衍射(XRD)和热重(TG)分析方法对复合抑菌膜的结构和性能进行了表征,研究了山苍子精油质量分数对复合抑菌膜的厚度、颜色、不透明度、透光率、抗拉强度、断裂伸长率、水蒸气透过系数、吸水率的影响。采用抑菌圈法和紫外可见分光光度法测定了不同山苍子精油添加量抑菌膜的抑菌性能和抗氧化性能,并分析了复合抑菌膜对苹果的保鲜性能。研究结果表明:随着精油质量分数的增大,抑菌膜的颜色由淡黄色转变为黄色,透明度、透光率和吸水率不断降低,热稳定性、抗拉强度和断裂伸长率先上升后下降,水蒸气透过系数(WVTC)和结晶度先下降后上升,当精油质量分数为1%时,抑菌膜厚度为0.1928 mm,总色差(ΔE)为53.77、不透明度为1.46 mm^(-1)、485 nm处透光率为23.4%、吸水率为23.32%;当精油质量分数为0.25%时,抗拉强度和断裂生长率达到最高值,分别为15.89 MPa和130.73%,WVTC最低为0.528 g·mm/(kPa·h·m^(2));当精油质量分数为0.5%时,热稳定性最好;此外,随着精油质量分数的增加,复合抑菌膜对大肠杆菌和金黄色葡萄球菌的抑菌性能逐渐增强,1%时的抑菌圈直径分别为21.09和23.11 mm;对DPPH自由基(DPPH·)、超氧阴离子自由基(O_(2)^(-)·)和ABTS自由基(·ABTS+)的清除能力也不断上升,1%时的清除率分别为45.60%、54.86%和27.91%。鲜切苹果的保鲜实验结果表明:0.5%山苍子精油复合抑菌膜显示出较好的保鲜效果,保鲜效果明显优于市售PE保鲜膜和不添加精油的复合膜。To develop novel food packaging films and improve their antimicrobial and antioxidant properties,natural mountain pepper essential oil was used as an antibacterial agent to prepare chitosan/gelatin composite antimicrobial films with varying addition amounts of Litsea cubeba essential oil(0.25%-1%,by mass fraction).The structure and properties of the composite antibacterial films were characterized using scanning electron microscopy(SEM),X-ray diffraction(XRD),and thermogravimetric(TG)analysis.The effects of the essential oil mass fraction on the thickness,color,opacity,light transmittance,tensile strength,elongation at break,water vapor transmission rate,and water absorption of the composite antibacterial films were studied.The antibacterial and antioxidant properties of chitosan antibacterial films with different essential oil mass fractions were measured using the inhibition zone method and UV-visible spectrophotometry,and the preservation performance of the composite films on apples was also analyzed.The results showed that as the essential oil mass fraction increased,the color of the antibacterial film changed from light yellow to yellow,while transparency,light transmittance,and water absorption continuously decreased.Thermal stability,tensile strength,and elongation at break initially increased and then decreased,while the water vapor transmission rate(WVTC)and crystallinity first decreased and then increased.When the essential oil mass fraction was 1%,the film thickness was 0.1928 mm,the total color difference(ΔE)was 53.77,the opacity was 1.46 mm^(-1),the light transmittance at 485 nm was 23.4%,and the water absorption was 23.32%.At an essential oil mass fraction of 0.25%,the tensile strength and elongation at break reached their maximum values of 15.89 MPa and 130.73%,respectively,while the WVTC was the lowest at 0.528 g·mm/(kPa·h·m^(2)).The best thermal stability was achieved at an essential oil mass fraction of 0.5%.Additionally,as the essential oil mass fraction increased,the antibacterial performa
