摘  要:为了探究燕窝中砷含量及食用风险,促进我国燕窝行业的健康发展。采用单因子指数法、暴露评估点评估法、非致癌性健康风险估算和美国食品安全法4种安全风险评估方法对燕窝中砷含量及食用安全风险进行评估。结果表明,143份燕窝样品中,砷含量平均值为0.079 mg·kg^(-1),且95.1%的燕窝砷含量小于0.2 mg·kg^(-1)。经过对燕窝中砷的食用风险评估,均未发现燕窝中砷会对人体造成明显的健康风险。由此可知,该检测样本中燕窝的砷含量对人体并不造成明显的健康风险,燕窝中砷的食用风险极小。In order to improve the development of the edible bird’s nest industry in China,the arsenic content and the edible risk were investigated.The single factor index method,exposure assessment point assessment method,non carcinogenic health risk assessment and American Food Safety Act were used to evaluate the con⁃tent of arsenic in edible bird’s nest and its food safety risk.The results showed that the average content of arse⁃nic in 143 edible bird’s nest samples was 0.079 mg·kg-1,and the content of arsenic in 95.1%edible bird’s nest was less than 0.2 mg·kg-1.Four safety assessment methods(single factor index method,exposure assess⁃ment point method,non-carcinogenic health risk estimation and the United States Food Safety method)were comprehensively applied to evaluate the consumption risk,and no detailed health risk was found.It can be seen that the arsenic content of edible bird’s nest in the test sample does not cause significant health risk to hu⁃man body,and the consumption risk is minimal.
