摘 要:试验以榆树钱为研究对象,以多糖得率为指标,通过单因素结合响应面试验,确定碱液提取法提取榆树钱多糖的最佳工艺条件,并对榆树钱多糖的抗氧化活性进行了研究。结果显示:碱液提取法获取榆树钱多糖的最佳工艺条件为:提取时间123 min、提取温度82℃、液料比29 mL/g、碱液浓度0.6 mol/L。在最佳工艺条件下得到的榆树钱多糖得率为26.68%,相比传统水提法提高了362.39%;榆树钱多糖总还原力吸光值为0.79,对超氧阴离子自由基、羟基自由基、ABTS+自由基的清除率分别达46.18%、83.67%、78.07%。With the yield of polysaccharide as the index,the optimal extraction conditions of polysaccharide from elm seed were determined by single factor combined with response surface test,and the antioxidant activity of elm seed polysaccharide was studied.The results showed that the optimum conditions of extraction were as follows:extraction time 123 min,extraction temperature 82℃,liquid-solid ratio 29 mL/g,lye concentration 0.6 mol/L.Under the optimum conditions,the yield of elm seed polysaccharide was 26.68%,which was 362.39%higher than that of traditional water extraction method.The total reducing power of elm seed polysaccharide was 0.79,and the scavenging rates of superoxide anion radical,hydroxyl radical and ABTS+radical were 46.18%,83.67%,and 78.07%,respectively.
