摘  要:由于妊娠乳畜分泌的乳汁中含有一定量的激素,目前这些激素种类及含量对人体健康的影响研究相对较少。文章对乳激素来源、分类、功能活性及激素残留可能产生的危害等方面进行综述,并对内源及外源性甾类、蛋白类常见乳激素的分析方法,包括免疫分析法、色谱分析法及电化学传感器等进行总结,为开发精准快速的乳激素检测方法及科学制定乳中激素相关限量提供参考依据。There are certain amounts of hormones in the milk secreted by pregnant dairy cows,but little research has been done on the kinds and concentrations of these hormones and how they affect human health.Thus,the types,metabolism,functional properties,and potential risks associated with hormone residues were reviewed in this paper.Additionally,the techniques for analyzing milk hormone endogenous and exogenous proteins and steroids,such as immunoassay,chromatographic analysis,and biosensor had been reviewed.The development of fast and accurate methods for detecting milk hormones should benefit from this work,which may also offer a rationale for the scientific definition of milk hormone limits.
