摘 要:目的研究PET瓶瓶壁材质对可乐饮品持气性的影响。方法分别应用光学法接触角测定仪、白光干涉仪研究了两种不同PET瓶瓶壁内表面与水滴、空气泡的接触角大小以及表面形貌图,考察其材质与水及气泡的亲疏性、粗糙度及最大凸凹点间距离。另外,还研究这两种PET瓶灌装的可乐碳酸饮料开盖后室温放置不同时间下的二氧化碳损失情况。结果PET瓶壁内表面材质总体上偏向于亲水性,但不同工艺配方生产的PET瓶内表面的亲水性、对气泡的捕获能力、粗糙度及最大凸凹点间的距离存在差异,另外,PET瓶用于瓶装可乐碳酸饮料时在开盖后放置4h的过程中每隔1h二氧化碳的损失量上也有差别。结论由于内表面的粗糙度不同,使得亲水及亲气泡性的差异性扩大,也就导致生产的PET瓶用于瓶装可乐碳酸饮料时对介质水的润湿性及对二氧化碳气泡的捕获性的不同,最终影响到碳酸饮料中二氧化碳的持气性能和消费者饮用时的刹口感。Objective To investigate the influence of PET bottle wall material on the CO2 holding capacity of cola beverages.Methods The optical contact angle analyzer and white light interferometer were used to study the contact angle with water droplets and air bubbles as well as surface morphology of two different PET bottle walls in order to investigate the material's hydrophily or hydrophobicity with water and bubble,roughness,and maximum distance between convex and concave points.In addition,the carbon dioxide loss of cola carbonated drinks bottled with these two types of PET bottled was also studied after opening the lid and being stored at room temperature for different times.Results The inner surface material of PET bottle walls generally tended to be hydrophilic,but there were differences in the hydrophilicity,ability to capture bubbles,roughness and the distance between the maximum convex and concave points on the inner surface of PET bottles produced by different process or formulas.Moreover,distinction also existed distinction in the amount of carbon dioxide loss every hour during the four-hour storing of bottled cola carbonated drinks after opening the cap when PET bottles were used.Conclusion Owing to the different roughness of inner surface,the differences in hydrophily/hydrophobicity and bubble affinity were expanded,leading to differences in the wettability of the medium water and the capture of carbon dioxide bubbles when PET bottles were used for bottled cola carbonated drinks,ultimately affecting the gas holding performance of carbon dioxide in carbonated drinks and the taste of consumers when drinking.
