摘 要:替代蛋白食品是利用合成生物学、细胞工程等生物制造技术获取的新型蛋白食品,具有可持续、合成高效等优势;推进替代蛋白工程化和工业化,对加快发展新质生产力、保障国家粮食安全具有重要意义。本文从国际竞争加剧、“大食物观”格局构建、新质生产力培育、可持续发展4个方面阐述了替代蛋白食品的发展价值,从科技、监管、工业化3个方面系统梳理了国内外替代蛋白食品的发展现状。研究认为,种子细胞系、无血清培养基、专用生物反应器、高效底盘菌株筛选及制备、植物蛋白肉塑形和赋味等关键技术有待突破,食品安全标准及监管框架亟需建立,关键要素的自主研发与生产能力以及产业链的细分领域也需加快拓展。针对性提出了加快替代蛋白食品工业化进程的发展建议,以期为我国替代蛋白工业化研究、实践、监管等提供参考和启示。Alternative protein foods are obtained using biomanufacturing technologies such as synthetic biology and cell engineering;they are sustainable and efficient in synthesis.Promoting the engineering and industrialization of alternative proteins is crucial for developing new quality productivity and ensuring national food security in China.This study illustrates the development values of alternative protein foods from the aspects of intensified international competition,development of an all-encompassing approach to food,new quality productivity,and sustainable development.It also analyzes the development status of alternative protein foods in China and abroad from the scientific,regulatory,and industrialized perspectives.It was concluded that breakthroughs should be achieved in key technologies such as cell lines,serum-free media,dedicated bioreactors,high-efficiency screening and preparation of microbial chassis strains,and plant-based meat fabrication and flavoring.Meanwhile,it is necessary to establish food safety standards and regulatory frameworks,improve China’s independent research and production capacities of key elements,and expand sub-sectors of the industrial chain.Furthermore,targeted suggestions are proposed to accelerate the industrialization of alternative protein foods.This study is expected to provide references and inspirations for the research,practices,and supervision of alternative protein industrialization in China.
